This is a favorite recipe, perfect for your late summer gatherings.
 

Ingredients:

  • 1 ½ lbs boneless, skinless chicken breasts, cut into cubes
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Wooden skewers, soaked in water for 30 minutes

 

Instructions:

In a bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper.

Thread the chicken cubes onto the soaked wooden skewers.

Place the skewers in a shallow dish and pour the marinade over them.

Make sure the chicken is coated evenly. Marinate for at least 30 minutes in the refrigerator.

Preheat the grill to medium-high heat.

Grill the chicken skewers for about 8-10 minutes, turning occasionally, until the chicken is cooked through and has only a light char. Cook through, but do not burn the exteriors. 

Serve hot with your favorite low-carb dipping sauce and a side of grilled vegetables.
